Quinoa Curry bowl
Ingredients:
1/2 cup quinoa
1 cup water to cook quinoa
1 can black beans
1/2 cup chopped onions
1/4 cup diced red bell pepper
Salt to taste
1 tsp garlic powder
1 tsp red chili flakes
1 cup water to adjust consistency(can use coconut milk)
Curry powder- 1 tsp of each Coriander powder, cumin powder, fennel powder
Method:
Rinse quinoa and cook it again with a cup of water for 15 mins or until all the water in the quinoa is evaporated. Remove quinoa from heat. Cover the pot for 5 more mins and fluff the quinoa with a fork. Ratio of quinoa to water is 1:2.
Heat oil in a pan, sauté onion, red bell peppers until soft.
Add canned drained black beans along with a cup of fresh water and simmer it for 10 mins.
Add garlic powder, red chili flakes, salt and curry powder and mix well.
Add quinoa to it and mix. If you want the dish to be in soupy consistency, add less quinoa.
Garnish the bowl with cheese and some chopped spinach.
Notes:
1. If using coconut milk, increase the amount of curry powder.
2. This curry can be in semi solid but pouring consistency.
