Eggless Lattice top Pear & Apple Pie




Making a lattice top pie is so satisfying especially for your kids who can help you decorate it. You can make this pie with any kind of fruit you want. The simple woven pattern of the pie makes it so pretty that you cannot resist taking (hundred) pictures of it. 

Pie was one of the dish which I kept on postponing because I was intimidated by the process of making the perfect pie crust. But trust me it’s very simple and not tricky at all. And getting complements from my family for an such easy recipe, is like a ice cream of top of the pie. 

For this Lattice top pie, there are few simple steps:

  • Making the dough and dividing it into two parts A & B
  • Making the pear and apple filling.
  • Rolling dough A for the crust and filling it.
  • Rolling dough B for the lattice top design
  • Bake
As simple as that!!!


Crust Ingredients:

 1 and 1/4  cup All purpose flour

 4 oz (1/2 cup/100 gms ) of cold butter, cubed

1/4 cup chilled water

1/2 tsp salt

2 tsp Sugar

Filling Ingredients:

2 medium sized Pears

1 large Gala Apple

1 tsp cinnamon powder

1/4 cup powdered sugar/brown sugar/regular sugar

1 tbsp corn starch/all purpose flour

1 tbsp cold milk



Pie dough:

In a mixing bowl, add all purpose flour, salt, sugar and cubed butter. Butter should be chilled and cubed. Use your hands to mix them well. Crush the butter and flour together and rub between your palms until all the butter is mixed in flour and gets the sandy texture. 

  

Add water to the flour a tablespoon at a time and start mixing it in flour. Keep adding the water until all the flour comes together and forms a stiff dough. You may or may not need all the water.

Divide the dough into two parts. One for the crust and other for the lattice top.

Cover both the portions of the dough in a cling wrap and chill them in the refrigerator for 30 mins.



Filling:

While the dough is chilling, we will prepare our pear and apple filling. Wash and peel the pears and apple and chop then into cubes.

Heat butter in a pan, add the chopped pears and apples and cook them for a minute. 

 

Add cinnamon powder, powdered sugar and mix them together until sugar melts.

 

Add the corn starch and mix it well until the mixture is thickened. Cook for about 3-4 minutes and turn off the flame. Let the mixture cool down completely.

 

Making the Pie:

Preheat the oven at 350 F /180 C.

After the dough is chilled, remove the cling wrap of one portion and place it on a floured surface and roll it into a big circle of 1/8 inch thickness. 

Place this rolled surface on a greased 9 inch pie pan. Gently press down the surface to reach the bottom of the pan. Trim off the excess dough from the edges of the pan.

Crimp the edges of the crust by using one finger of your hand and two finger of your left hand. 

 

Spread the apple pear cinnamon mixture on the pie crust.

Take out the other portion of the dough from the refrigerator and roll it into the same size and thickness as the first one. Cut the dough into stripes of 1 cm thickness each.

 

Take the stripes and start placing them into the lattice pattern (basket viewing pattern). Tuck the edges of the stripes inside the pie crust. 


 

Brush the top of the pie with cold milk. 


Place the pie on the middle rack in your oven. Bake it for 45 mins or until the top of the pie turns golden brown.

Let the pie cool down.Cut and Serve the slice of a pie with a scoop of your fav Ice cream.
