Vegan Sago Pudding- Sugar Free
Tapioca pudding is made of small white tapioca pearls also know as Sago or Sabudana. It can be served for breakfast or as a dessert. The tapioca pearls are soaked in the water for few hours and they are boiled in the milk and sweetened with maple syrup.
Ingredients:
1 cup Tapioca pearls
2 cups soy milk
Nuts (Chopped almonds or walnuts)
Water to soak Tapioca
1 tbsp maple syrup

- Soak the tapioca pearls in water overnight or at least for 4-6 hours. Quantity of the water should be just enough drown the pearls. The tapioca pearls will grow bigger in size and soften a bit.
- Heat a sauce pan, add milk, tapioca pearls and let them boil on a medium flame for 20 mins.
- Stir occasionally to make sure the milk doesn’t burn at the bottom of the pan. The milk will start to thicken after some time. Your can add more milk to it if you want.
- The tapioca pearls get bigger, translucent and softer after 20 mins.
- Add maple syrup and stir again.
Tips:
You can add tutti if you want some sweet crunch in your pudding.
