Eggless Mango cake




This is an easy eggless cake layered with mango mousse and whipped cream frosting 

Ingredients:

 3 cupscake flour

1/2 teaspoon salt

2 1/2 teaspoon baking powder

1 teaspoon baking soda

2 tbsp cornstarch

2 tsp vinegar/ lemon juice

2/3 cup oil

1/2 cup sugar

2 cup canned Mango Puree

1 cup milk

5 tablespoon water to adjust batter consistency


Sift all dry ingredients. Combine all wet ingredients. Then mix dry and wet ingredients and mix well. Use two 7” cake pans. Bake at 350 F/180 C for 30-35 mins. Let it cool completely before assembling.

Eggless mango pudding: 

1 cup mango pulp

1 cup water

3 teaspoon lemon juice

4 tablespoon sugar

2 tablespoon cornstarch

1/2 teaspoon vanilla extract

1 teaspoon cardamom


Heat the ingredients together on low medium flame until it thickens. Let it cool completely.

For frosting/ icing

1 carton of heavy whipping cream and confectioners sugar (whipped together into creamy and fluffy frosting.
