Cold Quinoa Yogurt Salad
Quinoa Yogurt Salad consists of few basic ingredients like cooked quinoa, yogurt, dried herbs, some raw veggies etc.
You can use Greek yogurt or regular whole milk yogurt for this recipe. You can use any dried herbs of your choice. Feel free to add fresh herbs if available. This is enhance the flavor of the salad. You can add corn kernels, avocados and pecans too.
Ingredients:
2 cups of cooked Quinoa
3-4 sweet peppers, slices
1/4 cup chopped cucumber
8-10 cherry tomatoes, halved
1/2 cup Greek Yogurt
1 tsp garlic powder
1 tsp oregano
1/3 cup chopped fresh parsley
Salt to taste
1/4 cup Fresh Mozzarella cheese, Chopped
1/4 tsp red chili flakes
1/4 cup chopped Walnuts (optional)

In a large mixing bowl, mix all the above ingredients together until well combined. Adjust the flavors according to your tastes. You can also use mayonnaise instead of greek yogurt.
