Instant Bitter Gourd Pickle
This is an instant pickle made with bitter gourd and few basic ingredients. This pickle need not be cooked and needs to be refrigerated. The bitterness of this pickle tends to reduce the next day. The procedure is similar to the Instant Carrot Pickle. It can be served with any kind of rice dishes or rotis, or Naan.
Ingredients:
2 Bitter gourds / karela/hagalkaai, washed
3 tbsp freshly squeezed lime juice
1.5 tbsp salt OR to taste
1 tbsp sugar
1 tbsp Red chili powder
For tempering:
2 tbsp oil
1 tsp mustard seeds
A pinch of asafetida
8 curry leaves
How to make:
1. Cut the bitter gourd into halves and Remove the seeds with the help of a spoon.
2. Now chop them into pieces.
2. Add salt and keep it aside for 20 mins.
3. Add red chili powder, lime juice and sugar.
4. Heat oil in a small pan, add mustard seeds. When they splutter, add asafetida and curry leaves.
5. Pour this on the bitter gourd mixture and mix well.
6. Serve this pickle after 2 days. The bitterness of this pickle reduces the next day. Keep it refrigerated.

thanx for sharing this awesome recipe. When i was in Delhi my keralite friens used to make this , i was thinking how to make , i got it now. They used to add garlic too, shall i try this with this.
