Peach Compote for Pancakes

Peach compote is a chunky peach sauce made using fresh or frozen peaches and sugar. It can be served as a pancake or a toast topping or a topping for your favorite dessert. You can take advantage of fresh peaches in the season to give your desserts some peachy flavor. I have uploaded my eggless Whole Wheat Pancakes on my blog.

This is a very quick and easy recipe. I have used a couple of other ingredients to make it i.e. water and corn starch. This is totally optional.

 Ingredients:

4-5 peaches

1/4 cup sugar

1/2 cup water

1 tsp corn starch + 1 tbsp water

Preparation:

1. Wash the peaches and chopped them into small pieces.

2. Cook them on low flame for about 2 mins.

3. Add sugar to it and let it dissolve completely.

4. Add water and corn starch mixture and let it simmer for another 10 mins until the compote gets bit thick. Turn off the flame.

5. Let it cool completely and store it in a glass container up to 3 days.

Notes:

1. You can a small piece of cinnamon stick for additional flavor.

2. You can used canned peaches instead of fresh or frozen.

3. Apples or pear can be used instead of peaches.

  4. Let the mixture cool down completely before refrigeration. It can be stored in the refrigerator for up to 3 days.
