Noodles in Avocado sauce
The noodles are cooked and mixed with the avocado sauce. Making the sauce takes less than 5 minutes. It’s really that simple.
Ingredients:
6 oz Dry noodles (any variety)
1 tbsp olive for noodles
Water for boiling the noodles
For sauce:
2 ripe avocados
1 tbsp lime juice
1 cup chopped cilantro
Salt to taste
1 green chili
1/2 tsp garlic powder
1 tbsp olive oil For sauce
1/2 cup water
For Garnishing:
1/4 cup chopped green onions
Chopped cilantro
Preparation:
1. Cook noodles according to package instructions. Run come water over the noodles. This stops then from getting over cooked. Drizzle a tablespoon oil over the noodles to prevent them from sticking to each other.
2. In a blender jar, add in the others ingredients mentioned under ‘For sauce’. Blend everything together into smooth paste. Add little extra water to adjust consistency.
3. In a mixing bowl, combine cooked noodles and the sauce together and mix them well.
4. Garnish it with chopped green onions and cilantro.
