Doodhi Halwa | Bottle Gourd Halwa | Sweet


Ingredients:
1 medium sized Doodhi/Lauki/Bottle gourd
Sugar
Milk
Milk Powder
Cardamom powder
Chopped Nuts for garnishing
2 drops of green food color (optional)
1 tbsp ghee/ clarified butter


Preparation:
Wash the gourd and peel it. Cut it into half and grate it. If the seeds are soft, you can grate them or discard them if they are hard.


 Heat the pan and add ghee. Once the ghee is hot, add grated gourd and saute until for a minute.


Add milk and let it simmer for 5 mins. Bottle gourd oozes out a lot of water. Let all the liquid evaporate and the quantity of the gourd is reduced.


Add sugar and let it dissolve.


Add the milk powder and mix it until the mixture is thickened. 


Add cardamom powder and food color and keep stirring it on low flame until everything is well combined.
