Dahi Bhindi ki Sabzi | Yogurt Okra Curry


Dahi Bhindi is a curry made mainly with Okras and yogurt and is lightly spiced. The Okra is cut and sautéed in a pan. A mixture of yogurt, gram flour and some spices is made separately and then added to the sautéed okra. It can be made very easily and can be served with Chapati,Naan, Kulcha or Khoba Roti.
1 Lb/  0.5 kg Okra washed and cut into 1 inch pieces
1 cup Yogurt
1.5 tbsp Besan/Gram flour
Salt to taste
1 tsp Garam masala
1 tsp Red chili powder
1/2 tsp turmeric
1 tsp Sugar
1 large onion chopped
1/2 cup water
Chopped Cilantro for garnishing

Method:
1. Heat oil in a pan, add chopped onions and sauté until they are translucent.
2. Add chopped Okra and sauté them until they are tender and cooked. Lower the heat of the pan.

3. In a mixing bowl, mix yogurt, red chili powder, turmeric, garam masala, besan and whisk them together. Add this mixture to the sautéed okra. Make sure that the heat is low while adding yogurt.
4. Add water to the curry and let it simmer for another minute. Then turn off the flame.
5. Add salt and sugar and mix well. Let it sit on a low flame for another minute or so.
Turn off the flame.  Garnish it with chopped cilantro.

6. Serve Dahi Bhindi with Naan, Kulcha or Khoba Roti.



Notes:
1. Whisk yogurt before adding other ingredients. Adding gram flour to the yogurt prevents it from curdling.
2. You can add puréed tomatoes to the sauce before the yogurt to make it more tangy.
