Mexican Bean Rice | Leftover Rice | Vegan
This is one of the best choices to make when you have plenty of leftover rice on hand. Leftover rice is dry and not mushy which makes it perfect for this recipe. If you do not have leftover rice, cook rice as usual and spread it on a wide dish and allow it to dry completely before marking it.
Main Ingredients:
- 3 cups pre cooked or leftover Rice
- 1 can Black Beans (drained)
- 1 tbsp olive oil
- 1/2 cup chopped onions
- 1/2 cup chopped green bell peppers
- 1 cup broccoli florets
- 1/4 cup corn kernels (optional)
- 1/4 cup chopped Cilantro
Spices/Seasoning:
- 1 tsp Cumin powder
- 1 tsp Red Chili powder
- 1 tsp Garlic powder or minced garlic
- 1 tsp any kind of seasoning(see notes)
- Salt to taste
Preparation:
- Heat Oil in a pan. Add onions and green bell peppers and sauté them until they are soft. If using fresh minced garlic, add now and sauté.

- Add broccoli and sauté them until they are half cooked.

- Add the drained beans and corn and mix well.

- Add cumin powder, garlic powder, red chili powder and the seasoning and mix well and let the mixture sit for a minute on low flame.

- Fold in rice and mix well until well combined.

- Add salt and mix well. Garnish it with chopped Cilantro.
Notes:
- I always like to use some kind of Mexican seasoning for this dish. It can either Taco seasoning or Chipotle seasoning or any other seasoning that brings out the aroma. If you do not have any seasoning on hand, go ahead and add just the ingredients mentioned in the above list.
