Methi Matar Malai Curry | Nut-free
Methi (fenugreek leaves) Matar (green peas) Malai (Cream) is a flavorful Indian curry made with these 3 ingredients along with onion and cashew paste and some spices. This curry is mildly sweet in taste.As this is a nut free recipe, I have not used cashews in this recipe.
Ingredients:
10 oz / 280 gms Frozen or fresh Methi Leaves
1/2 cup of fresh or frozen peas
2 large onions
1/2 cup/ 120 ml heavy cream
1/2 cup water
Salt to taste
1 tsp sugar
1 tsp cumin seeds/ jeera
1 tbsp oil
2 bay leaves
Pluck the methi leaves and wash it well. Add 1/2 tsp of salt to the leaves and keep it aside for 15 minutes. Squeeze all the excess water from the Methi leaves. This helps to reduce the bitterness of Methi. If you are using frozen Methi, use the same procedure to prep the Methi.
Chop the leaves finely and keep them aside.
- Heat oil in a pan, add cumin seeds and let them brown a bit.
- Add chopped onions and sauté until they are translucent. Grind it to a smooth paste once they are cooled.
- Add oil to the same pan, add chopped Methi leaves and cook them until it reduces in quantity.
- Add the onion paste to the Methi leaves and mix well.
- Add water and heavy cream to it.
- Add green peas to the curry and simmer it for 5 mins.
- Add salt, sugar and Garam masala powder to the curry and bring it to a boil.
