Cold Basil Pasta Salad
Mrs Darla Bray, who is my neighbor was kind enough to share fresh Basil leaves from her garden. I absolutely love the taste of fresh Basil. Cold pasta salad is quick and easy to make with few ingredients that are available in your kitchen. You can change the flavor and use different set of ingredients to suit your taste buds.
The main ingredients are cooked Pasta, Yogurt and Basil. Cooked and refrigerated pasta is preferred to make this salad. It can be made ahead of time and is a best option for your lunchbox, light dinners or parties or to take on a picnic.
Ingredients:
- 2 cups cooked Pasta (any variety or combination)
- 3/4 cup Plain Yogurt/Greek Yogurt
- 1/2 cup chopped Basil leaves
- 4 Green onions (chopped)
- 1 avocado chopped
- 1/4 cup chopped Cilantro
- 1/4 cup chopped onions (optional)
- Salt to taste
- 1 tbsp Nutritional Yeast (Optional)
- 1 tsp dried Oregano
- 1 tsp red chili flakes
- 1 tbsp olive oil
Preparation:
- In a large mixing bowl, add cooked pasta.
