Chipotle inspired Veggie Burrito Bowl



 
Veggie burrito bowl is a Mexican make ahead meal consisting of various recipes combined together into one whole dish. They are Cilantro rice, quick simmered Black Bean mixture, juicy Corn Salsa, Fajitas, chunky Guacamole, tomato Salsa, and the dish is topped with sour cream and chopped green leaf lettuce.

I always have the ingredients stocked in my pantry or refrigerator as I go through them very quickly. I use more or less the same ingredients for making Loaded Nachos, Mexican Quinoa Buritto Bowl , No Cheese Quesadilla, Quinoa Salad and Mexican Rice. Make sure to check these later if you have enough stock of the ingredients.

You can easily this dish as vegan by using plant based sour cream and butter instead. 


Cilantro Rice:

1.5 cups of Basmati rice or any other variety

2 tbsp butter

1/2 cup chopped cilantro

Salt to taste

You can pressure cook rice up to two whistles or cook it in Instant pot for 10 mins on high pressure. Allow the pressure to release naturally. Add butter to the cooked rice and add cilantro. You can add your own kind of rice with any flavor you like. You can use Forbidden rice or Brown rice too.

Black bean mixture:

2 cans of black beans

1/2 cup chopped onions

1/2 cup chopped bell pepper

1 tbsp seasoning (I used Chipotle & Roasted garlic seasoning)

Salt to taste

1 tsp Lime juice

1 tbsp Olive oil

Heat oil in a pan, sauté onions and bell pepper until cooked. Add black beans along with the liquid in the can. Add seasoning and salt and simmer it for 2 minutes. Add lime juice and mix. Keep the mixture aside. 

Using a canned beans can help you save a lot of time. If you prefer to use dried black beans plan ahead to soak them and cook them until soft.

Corn Salsa:

1 cup canned or frozen corn kernels. 

1 chopped tomato

1/2 cup chopped onion

2 tbsp chopped cilantro 

Salt to taste

1 tbsp lime juice

Mix all the ingredients together in a mixing bowl and set it aside.

Chipotle style Fajita Veggie:

2 onions chopped in lengths

1 whole green pepper chopped in lengths

Salt to taste

Fajita seasoning or Chipotle & Roasted garlic seasoning

1 tbsp oil

Heat oil in a  pan, add onions and green peppers and sauté until they are cooked. Add salt and seasoning and mix until combined. Keep Fajitas aside.

So you have all the components ready to put them into one dish. Please check my guacamole and tomato salsa recipe. 

Assembling the Veggie Burrito Bowl:

On a serving plate, add rice and top it with black bean mixture, tomato salsa, corn salsa, guacamole, fajitas, lettuce and a dollop of sour cream. There is no fixed measure on how much should be on one plate. It all depends on how you like it.You can customize it however you like. I like my cilantro rice with less beans, less fajitas, more guacamole, more salsas and more cream cheese.😉 

The entire meal is super easy, nourishing and delicious. Once you have the ingredients ready, you just have to throw them into your bowl. It’s such a easy and delicious dinner idea for working moms, single parents or bachelors.
