Instant Pot Purple Cabbage Pulao| Vegan


Purple cabbage, more commonly known as red cabbage, is used in salads, coleslaw, sautéed cabbage, sabzis and pickles.  I love to use Purple Cabbage for making Coleslaw and this delicious Rice. 


Ingredients:
  • 1 cup Purple cabbage chopped
  • 1/2 cup onions chopped
  • 1 cup Basmati Rice (washed & soaked for 30 mins)
  • 1 and 3/4 cups water
  • 1 tbsp garlic paste
  • 1 tsp Cumin seeds/jeera
  • 1 inch cinnamon stick
  • Salt to taste
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tbsp Oil/Butter
  • 1/4 cup Raw purple Cabbage for garnishing



Method:
  1. Turn on Instant Pot on sauté mode. Add oil.
  2. Once oil is heated, add cinnamon stick, cumin seeds and onions and sauté until the onions are translucent.
  3. Add garlic paste and sauté for few seconds.
  4. Add cabbage and sauté for a minute.
  5. Add water and salt mix well.
  6. Add coriander powder and cumin powder.
  7. Drain the water from the rice and add it to the instant pot.
  8. Turn off sauté mode. Cover the IP with the lid and pressure cook on high for 10 mins. Allow the pressure to release naturally.
  9. After the pressure is released, mix the rice with gentle hands. 
  10. Serve Purple cabbage Pulao with the side of your favorite Raita.



Notes:
1. You can use regular cabbage to make this rice.
2. You can also use your regular pressure cooker to make this rice and cook it up to 2 whistles.
