Eggless Matcha Butter Cookies
These cookies are crispy, buttery and they melt in your mouth. They are baked with basic ingredients and flavored with vanilla and Matcha. They are the perfect cookies for tea time.
Ingredients:
1 1/2 cups flour
4 tbsp corn starch
3/4 cup powdered sugar**
8 oz/ 225 gms butter at room temperature
1 tsp Vanilla
2 tsp Matcha powder (I used culinary grade)
Method:
- Pre heat the oven at 350F/180C. Line the cookie sheet with parchment paper.
- In a mixing bowl, add butter And whisk until its creamy and changes its color.


- Add powdered sugar and vanilla and whisk again until it's well incorporated.

- Sift flour, corn starch and Matcha powder in the butter mixture and mix well until well combined.


- Now add the flour mixture to the butter and sugar mixture and mix well until the batter forms smooth paste like consistency. It shouldn’t be like a dough. Consistency should be in between dough and batter

- Fill the batter in the piping bag with a flower tip. Pipe swirl cookies on the cookie sheet. Bake the cookies for 20-22 mins or until the underneath of the cookie is slightly brown.


- Let the cookies completely cool down. Store them in an airtight container upto a week.
**I used organic powdered sugar which contained Tapioca starch instead of corn starch, so my cookies were not able to hold their shape.
You may increase the quantity of matcha by 1 tsp if you want.
