Creamy Spinach and Corn Noodles (No eggs, No Cheese)





This creamy Spinach and corn noodles is a simple one pot, dish when you are running late. No mess, no fuss dish. Kids love it because you can make it taste like ‘Mac n cheese’ by adding breadcrumbs and lots of cheese. But I wanted to avoid both these ingredients to keep this dish healthy.

16 oz dry noodles ( any variety)
2 cups chopped fresh spinach
1/2 cup corn kernels
2 tbsp All purpose flour
2 cups milk
Salt to taste
1 tsp black pepper powder
2 tsp garlic powder
1 tbsp seasoning
Cheese (optional)- I didn’t use it.




Method:

  • Cook noodles according to package instructions. They shouldn’t be too soft. 


  • Heat a pan. Add olive oil, all purpose flour, and cook for a couple of minutes until the raw smell of flour goes away. This is called the roux. 


  • Add chopped spinach and cook until it is reduced in quantity.
     
  • Add milk to the roux and mix well and boil until the milk thickens.

      

  • Add seasoning, garlic powder, pepper powder and salt and mix well.

   
  •  Add the boiled noodles and corn mix until well incorporated. 
     


  • Add pepper powder to taste. Go ahead and add lots of cheddar cheese If you want to do so.
