Zucchini rolls ups | Kids’ snacks
What kind of sauce?
You can use any of your favorite sauce which is thick and not runny. Zucchini tends to ooze out lot of water after it’s baked. So runny sauce may make the roll ups soggy. If you have ricotta cheese, go ahead and use that.
What kind of cheese?
I have used mixture of finely shredded cheddar and and monterey jack cheese. You can add mozzarella cheese or parmesan cheese instead. Cheese acts as a binder in this recipe. You can also fill the zucchini roll ups with ricotta cheese and spinach spread.
Ingredients :
2 large zucchini
Marinara sauce
Shredded Cheddar cheese
Seasoning (optional)
Method:
1. Slices zucchini length size using a slicing tool or a mandolin slicer.
2. Lay zucchini slices on a plate and Keep them for 20 mins. Dab excess moisture off the slices and then apply marinara sauce on them.
3. Sprinkle cheddar cheese on them.
4. Roll the zucchini slices as shown in the image.
5. Place them in a cake pan.
6. Sprinkle some more cheese on the top.
7. Bake until the cheese is completely melted. It takes about 10 mins.
Serve zucchini roll ups as appetizers or sides
Notes:
Strain your marinara sauce if it is runny. Thicker the sauce better it is.
Add more cheese if you like.
