Tortilla Spinach Pinwheels
Tortilla Spinach pinwheels are served as appetizers or sides and can be
made ahead of time. They are absolutely delicious and are kids’ favorite
snacks. They can be refrigerated and can be served cold or at room
temperature. They are very easy to make with just few ingredients.
All you need is:
- 4 Homemade Tortillas or spinach tortillas or any store bought will do.
- 2 sliced Avocados
- Spread (see below for instructions)
How to make Spinach Ricotta Spread:
I used spinach ricotta to make the spread. This can be totally replaced
with hummus or just cream cheese or any kind of your favorite spread. This
spread is very similar to the one which I used for
Manicotti
recipe.
10 oz chopped Spinach
1/2 cup Grated Carrots (optional)
1 medium sized onion finely chopped(optional)
1/4 cup ricotta cheese
1 tsp garlic powder
1 tsp dried basil(optional)
1 tsp dried basil(optional)
Salt to taste
Heat oil in a pan, add onions and sauté until they are translucent. Add
spinach and cook it until it reduces in quantity. Add grated carrots and
cook for couple of mins. Add ricotta cheese and cook until it’s well
combined. Add salt, garlic powder, basil and mix well. Let the mixture
cool down. (See Image 1&2)
How to make the Pinwheels:
- Once you have the spinach ricotta mixture ready, scoop out the mixture and spread it on the tortilla. (See #3)
- Place sliced avocados on the spread. (#4)
- Roll the tortillas and cut them into 1 inch thick rolls. I cut off the edges to make the pinwheels look neater.(#4&5)
- Serve the pinwheels with your favorite condiment.
