Savory Breakfast Muffins | Semolina Muffins | Sooji Breakfast



These breakfast muffins are savory, healthy and without any sweetness. They are made with very simple ingredients and are very filling. Preparation of the batter doesn’t not take more than 10 mins. This is a quick and easy recipe.



Makes: 9-10 medium sized muffins
  • 1 cup -Semolina/ Rava
  • 3/4 cup yogurt
  • 1/3 cup - chopped carrots
  • 1/3 cup- chopped spinach
  • 1/4 cup- chopped green pepper
  • 1/4 cup - chopped onion
  • 2 cloves of garlic minced 
  • Salt to taste
  • 1/4 tsp- Black pepper powder
  • 1/2 tsp - Baking powder
  • 1tsp oil
  • 1/2 cup- Water
  • Mozzarella cheese for garnishing(optional)


Method-
  • Preheat oven at 350F / 180 C.
  • In a mixing bowl, add semolina, chopped veggies, garlic, salt, pepper powder, oil and yogurt.
  • Add water and mix well to form thick batter.
  • Add baking powder and mix well.
  • Grease the muffin pan with oil and fill the cups half way through.
  • Sprinkle some cheddar cheese on top. This is totally optional.
  • Bake the muffins for 20 minutes. Check with a toothpick whether they are done.


Tips:

  • Let the muffins sit in the muffin pan, before you remove them. Loosen the sides of the muffins from the pan and then scoop them out.
