Aloo Pudina paratha | Potato Mint Stuffed Indian Flatbread | Vegan
Aloo (potato) Pudina (mint leaves) paratha is a Indian whole wheat flatbread stuffed with boiled mashed potatoes and mint leaves together and seasoned with spices. It is usually served as main course and relished with pickle, dal or Raita. They can also be served as breakfast or can be packed for lunch. Potato mint stuffing can be made ahead of time and be refrigerated until you make the parathas.
Ingredients for Dough:
1 1/2 cup whole wheat flour
salt to taste
1 tbsp oil
water(for kneading)
Ingredients for Potato stuffing:
1 cup boiled and grated potato
2 tbsp mint leaves finely chopped
1 tsp Garam Masala
1 tsp garlic paste
1 green chili (Optional)
1 tsp ginger paste
Salt to taste
Preparation:
- In the mixing bowl, add wheat flour, add salt, oil and mix until incorporated. Add water and start to knead into a dough. The dough should not be too hard nor too soft. Set it aside for 20 mins.

- Meanwhile, in a mixing bowl, add all the stuffing ingredients together and mix them well until incorporated. The stuffing is ready. Set aside.

- Heat the cast iron griddle on medium high.
- Divide the dough into small balls of one inch diameter. One paratha requires two balls of dough and the stuffing is sandwiched in between and rolled out.
- Roll 2 dough ball into a disc of 4 inch diameter each.
- Take a portion of stuffing and spread it on the rolled out dough. Place the other rolled out dough of top one the first one.
- Seal the edges of the rolled out dough together so that the filling doesn’t come out.
- Now roll the Paratha with Rolling pin with light hands. Do not press too hard. The thickness of the parathas can be anywhere between 1/4 “ to 1/8”.
- Apply melted butter or ghee on one side of the rolled out paratha and place it on the hot griddle.
- Cook for a minute or until brown spots appear. Flip the paratha and cook on the other side.
- Place all the cooked parathas on a plate. Serve the warm parathas topped with butter (Vegan or dairy) and pickle on the side. You can also serve them with Raita or Vegetable curry.
