PANCIT CANTON Noodles- Vegetarian
Pancit Canton is a kind of Lo Mein noodles which are also know as flour sticks. Traditionally this dish was served on the birthdays or special occasions since it is known to represent good health and long life. It is still believed in some places.
The best thing about this dish is it uses a lot of veggies which not only makes it healthy, but it also looks colorful. Pancit Canton noodles call for meat and seafood in the recipe and also, the noodles are cooked in the broth and sauces along with the other ingredients. But, I make it in my own way and don’t for wait for any occasions to make it ;)
Here is the vegetarian version of Pancit Canton.
What kind of veggies:
I like to use my all favorite veggies (if available) that go well with the noodles.
Onions
Green pepper
Brocolli
Baby corn
Shredded cabbage
Snow peas
Carrot
Garlic
Mushrooms ( I did not use mushrooms since I did not have it)
Other ingredients:
- 3 tbsp Olive oil or sesame oil
- 1/2 pack of Pancit Canton noodles
- 3 tbsp soy sauce
- 1tbsp hoisin sauce
- 1 cup water
- salt
- sugar to set off the tanginess of the sauces.
- 2 tbsp Corn starch mixed in 3 tbsp water
Instructions:
- I like to boil my noodles in plain water as this is the method I always follow. Bring the water to rolling boil, then add the salt and noodles. Make sure you submerge the noodles in the water. These will be done in 2-3 minutes, so keep checking until they are done.
2. Cut the veggies in julienne sticks. In a stir-fry pan, heat some oil, add onions and garlic. Sauté them for a minute, then add green pepper, snow peas, carrots and broccoli. Sauté them for 2 mins on high flame.
4. Add the sauces and sugar at this point. Do not add salt.You can adjust the salt after it’s done.
5. Add water and allow it to boil. Add the corn starch slurry. Bring it to a boil and add the noodles and mix well. Turn off the flame. Serve warm.
