Vegan Potato Pancakes
Potato Pancake is a thin, flat cake made out of grated potatoes, flour with additional ingredients and are fried and turned in a pan. Usually pancakes are made with eggs, but here is the eggless version of it.
Ingredients:
- 2 large potatoes (washed, peeled and grated)
- 1/2 small white or yellow onion
- Oil
- 1/4 cup all-purpose flour
- 1tbsp corn starch
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- water to adjust the consistency of the batter.
- Grate potatoes and squeeze out as much moisture as you can using paper towel.
- In a large bowl, mix grated potatoes, onions, flour, corn starch, salt, black pepper together and mix well.
- Add little water to make the batter thick but flowy consistency. Batter should not be runny.
- Add oil and baking powder and mix well.
- Heat up a cast iron or a non stick pan, drizzle some oil on it.
- Pour a ladle full of the pancake batter on the pan and fry it until the base is golden brown.
- Flip the pancake and fry it for a minute.
- Serve the yummy potato pancake with tomato ketchup, and chopped green onions.
