Homemade Spinach Tortillas

Spinach tortillas recipe uses the basic ingredients which are easily available at home. To make these tortillas you need fresh or frozen spinach leaves. These tortilla are the perfect ingredients for your Veggie Wraps, tacos, quesadillas, burritos, and fajitas.



Next, you need flour to make the tortillas. All purpose flour works the best. You can use whole wheat flour and increase the amount of oil by 2 tbsp. This will make the tortillas softer.
  • 3 cups spinach leaves
  • 3 cups All purpose flour
  • 1/2 tsp baking powder
  • Salt to taste
  • 3 tbsp oil
  • Water to knead the dough (as needed)
This recipe make 20-22 tortillas.


Preparation:

  • Heat water in a pot. Once the water comes to a boil, simmer the heat and add the spinach.



  • Let the spinach reduce in quantity.
  • Puree the cooked spinach with the stick mixer or in the blender.



  • In a bowl add flour, salt, baking powder and vegetable oil in a bowl and mix well. I have used my stand mixer here. Add spinach puree and mix well.



  • Add little water and make a soft dough. 



  • Cover the dough and keep aside for 15 minutes.
  • After 15 minutes, divide the dough into equal portions.



  • Take a portion of the dough in the rolling board and roll it out using a rolling pin. Roll it as thin as possible. 


  

  • Cool the rolled tortilla on a cast iron griddle and cook on a medium flame on both sides until small brown spots appear.



  • Make all the tortillas and stack them on top of each other and cover them with a lid until you are ready to use. This helps to keep them soft and they do not dry out.






  • They taste so much better than storebought flour tortillas and you can make them whenever you want.
  • You can make ahead a big batch of tortilla dough and refrigerate it for a day or you can freeze them in small batches wrapped in a cling wrap and in a zip lock bag. When ready to use, just keep the dough in the refrigerator the night before. Make tortilla as usual.
