Punjabi Dum Aloo | Roasted Baby Potatoes in Creamy Gravy


Dum aloo is a popular Indian dish made with fried baby potatoes and served with the onion, tomato, cashew and yogurt gravy flavored with spices. It is a special dish served on special occasions. 

In this recipe, I have not used any nuts in the gravy and used heavy cream instead to get that creamy consistency and flavor. Also, I have roasted the potatoes in two tablespoons oil, instead of deep frying them. Dum aloo can be eaten with Rice, Roti, Naan, Kulcha or Paratha.


Ingredients:

  • 10 baby potatoes boiled (Washed and boiled)
  • 1 cup onions cubed 
  • 2 medium tomatoes
  • 2 tbsp oil
  •  3 tablespoon thick curd (plain)
  • Salt to taste
  • Sugar to set off tanginess
  • Water to adjust consistency
  • 2 tbsp Heavy cream (Skip if you use cashews)**
 Spices
  • Bay leaf
  • 2 cloves
  • 7-8 black pepper corns
  • 1 tsp turmeric
  • 1 tsp red chili powder 
  • 2 cardamoms 
  • 1/2 inch cinnamon
  • Dried fenugreek leaves/ kasoori methi 


Method:
  • Peel the potatoes and cut them in half. This will ensure the spices will be absorbed by the potatoes
  • Heat oil in a pan, add the potatoes. 
  • Add chili powder, turmeric, salt to and roast the potatoes until they turn slightly crisp and are well coated with the added spices.
  • Remove the potatoes on a absorbent towel.
  • In the same pan add oil, bay leaf, cinnamon, cloves, cardamom, pepper corns, chopped onions and sauté them.
  • Add chopped tomatoes and cook them until they are soft. 
  • Let the mixture cool and blend it into smooth gravy.
  • In a same pan, add the onion tomato gravy, add salt, Turmeric, red chili powder, sugar and mix well. 
  • Reduce the heat of the pan and Add thick yogurt to the gravy.. the gravy might curdle. Add whipping cream at this stage and this will ensure the smooth consistency of the gravy. 
  • Add the potatoes in the gravy. Let the gravy boil for 2-3 mins.
  • Turn off the heat. Serve Dum aloo with Naan bread or Roti



Notes:

  • **I have not used cashews or any nuts in this recipe.  So I have added whipping cream to make the gravy creamier.
  • You may deep fry the baby potatoes before adding them to the gravy. You can even bake them if you wish to.
