Onion Masala buns
Onion Masala buns are savory buns and are extremely popular in the state of Karnataka, India. These buns are very delicious with hint of spices and onions. They are nice, fluffy and light and can be served for breakfast or as tea time snacks. This is a basic recipe for making these buns. Do try it out and let me know how they turned out.
1.5 cups bread flour
2 tsp active dry yeast
1.5 tsp Sugar
1 and 1/3 cup warm milk
1 tbsp Chili flakes
1.25 tsp Salt
1 tbsp dried fenugreek leaves/kasoori methi
1 tbsp Cumin seeds/ Jeera
1 onion chopped
4 tbsp butter

Method:
- In a large bowl, add warm milk, sugar and yeast. Mix together and let it sit for 10 mins.
- Sift while wheat flour and bread flour together and set aside. Add salt to it.
- After yeast blooms, add the flour mixture and start mixing it together. Add chopped onions, cumin seeds/jeera, dried fenugreek leaves/ kasoori methi , chili flakes.
- Knead the mixture after it is well combined. Add butter to the dough and knead again for 4-5 minutes.
- Keep the dough for an hour for rising. I used my instant pot on yogurt setting to keep the dough warm. If you do not own an Instant Pot, you can keep the dough in a large bowl with the lid on, the side of the bowl covered with a towel.
- The dough will be doubled in size.
- After the dough rises, punch the dough lightly and knead it one more time.
- Divide the dough into 10 equal portions. Shape them into buns by tucking them in and shaping them into round balls.
- Keep the shaped buns apart from each other in a rectangular cake pan lined with a parchment papaer.
- Cover the buns with a towel and keep them for the second rise for 20 minutes.
- The buns will expand a bit more in those 20 mins.
- Once they are fluffed up, Brush them with milk.
- Bake them for 28-30 mins at 350 F/180 F.
- Remove the buns from the oven and place them on cooling rack.
- Buns are very fluffy, light and airy. They taste good just by their own.
- Serve warm buns along with olive oil+ garlic powder+salt+chili flakes dip.
