Instant Pot Black Rice Pudding with Custard

The Black rice pudding and custard combo is very unique and so delicious and you just cannot go wrong with it!!! I have used my instant pot for the pudding and stove top method for the custard. Do try this combination and let me know how it turns out..



How to make Black Rice Pudding:

1cup Black Rice
2.5 cups Water
1tsp cardamom powder
1/4 cup Sugar (we need more sugar for custard too)
1tsp Ghee/Clarified Butter
1/2 cup Regular milk

Instructions:
  1. Turn on instant pot on sauté mode and add ghee to it. Roast black rice in ghee for a minute..
  2. Add water and sugar to the rice and mix well. Turn off sauté mode and pressure cook on high for 22 minutes. Allow the pressure to release naturally. 
  3. Rice will be cooked completely after the pressure releases. Add milk.
  4. Add cardamom powder and stir.

If you do not have your instant pot, please use a stove top method. I have posted it on my blog before. Whichever method you use, it turns out perfect.


How to make Custard:


This is the regular custard that we make for custard fruit salads. In case you have forgotten, here is a quick recap.

Ingredients:

2 tbsp custard powder (any flavor)
1/4 cup cold milk
1/3 cup sugar
2 cups milk

Preparation:
  1. Heat milk in a thick bottom sauce pan and let it boil once.
  2. In a separate bowl, add custard powder and cold milk and mix well until no lumps.
  3. After milk boils, add the custard mixture to the hot milk.
  4. Keep stirring until it boils one more time. Don’t let the milk sit without stirring, it may burn the bottom of the pan and give the custard a burnt taste.
  5. Allow the custard to cool down.


How to serve:

It’s totally up to you how you want to serve this dish; in a cup layered on top of each other, in a soup bowl or in a dish served side by side. It can be served warm or cold, as a side dish or a dessert. I prefer to eat it as my main course since it is filling.

What kind of fruits:

Mangoes and bananas are my personal favorite for this particular dish. But you add pomegranate, peaches, apples or any other nuts if you wish. I like you keep it simple by adding just one fruit.
