Healthy Spinach Veggie Wraps

These wraps are made of homemade spinach tortillas filled with fresh veggies like avocados and cucumber, stir fried veggies and served with a yogurt based dip. This is a very simple recipe and can be made in many different ways. I have not used any kind of cheese in this recipe. 


Tortillas:
You  need to prepare the spinach tortillas. You can use the regular or store bought tortillas. This can save you time if you want to fix a quick dinner. Here is the recipe for my Homemade Spinach tortilla.


Stir fried Veggies for Filling:

You can use any veggies of your choice. I have used the following ingredients for stir fry filling.
  • 1 Chopped Onion
  • 1/2 Chopped Red/green pepper
  • 1 head Broccoli florets washed
  • 1/2 block of Tofu cut into Cubes
  • 1 tbsp Soy sauce
  • sugar as per your taste
  • 1tsp corn starch mixed in 1 tbsp water
  • olive oil
Method:
  • Heat oil in a pan, add chopped onions and peppers and sauté them till a minute.
  • Add brocolli and sauté until they are half cooked.
  • Add Soy sauce, sugar and corn starch slurry and bring it to a boil. The mixture thickens a bit.
  • Add tofu and mix until the cubes are well coated in the sauce.



Yogurt Dip
  • 1 cup plain yogurt. you can use greek yogurt if you want.
  • 1tbsp sugar. I like my dip to be a bit on sweeter side. But it’s up to you how much sugar you want.
  • Salt to taste
  • 1 tsp vinegar 
  • 1 tsp garlic powder
  • 1 tsp dried basil
Method:
  • Mix all the ingredients and whisk well. This is the easiest dip you can make.

I have chopped slices of avocados and cucumbers for the filling.


Assembling the Tortilla Wraps:
On a tortilla, spread the dip and place the slices of avocados and cucumbers. Spoon the stir fry filling on it and roll the tortilla into a wrap like shown in the picture below.


  • This is how the rolled wraps should look.



  • Cut the wrap diagonally in the center and serve them with the yogurt dip and any other sauce or dips of your choice. 




Tips:
  1. These wraps can be made ahead of time and can be stored in the refrigerator for a day. They taste good even when they are cold.
  2. You can add any kind of cheese or nutritional yeast to the filling if you wish.
