Eggless Tutti Frutti Cake
The Tutti frutti cake is eggless and made of condensed milk, which gives a very unique flavor to it. It is very soft and spongy and the tiny bits of tutti frutti makes the cake a feast for the eyes. The tutti frutti bits are made out of raw papaya. If you do not have them, you can add sliced almonds or chopped walnuts instead.
- Butter-1/2 cup
- Condensed milk- 1 can/ 400 ml
- Vanilla Extract-1 tsp
- All purpose Flour/ Maida- 2 cups
- Baking Powder-2 tsp
- Baking Soda-1 tsp
- Milk-1 cup
- Apple Cider Vinegar/ White Vinegar-1 tsp
- Tutti Frutti - 1/2 cup
This is how tutti frutti looks. You can find it in any Indian stores or Indian section of Asian stores.
Procedure:
- Preheat oven to 175°C/350 F
- Line the cake pans and grease then with butter. You can use 9” *13” pan or two 7” pans. I have used 9”*13” cake pan.
- In a bowl whisk together All purpose flour, baking powder and baking soda.
- In a large bowl take butter and vanilla and beat for 2 minutes.
- Add in the condensed milk and beat for one more minute.
- In the Container or a cup, add milk and vinegar and vanilla extract. The milk will curdle in few minutes.
- Now add 1/3rd of the flour to the butter mixture and beat until incorporated.
- Add 1/2 of the curdled milk mixture and beat. Repeat again finishing with the third portion of flour.

- Stop beating once all the ingredients are incorporated.
- Add 1/2 cup of tutti-frutti to the batter and gently fold in. Do not beat.
- Pour the batter into prepared cake tins.
- Bake the cake for 30 to 35 mins.
- If inserted toothpick comes out clean, remove the pans from oven and allow to cool on wire rack for 5 minutes.
- Flip the cake on the wire rack and allow it to cool completely.
Tips:
1. Add some more Tutti Frutti on the top of the cake before baking, to make it more pretty.
2. Keep an eye on the cake after 30 mins.
3. Keep the cake slices at room temperature in an airtight container up to three days. Then refrigerate them.
