Eggless Mango Loaf
In the last few weeks, mangoes have been my food obsession. The main ingredient in this recipe is of course mangoes or mango pulp. If you are able to find fresh Alphonso mangoes, nothing can beat the taste. But If you don’t, you can use the store bought sweetened mango pulp or the frozen mangoes. The other ingredients that I have used are very basic ingredients which are already available in your pantry.
Recipe is pretty simple and easy and quick. All you need to do is to get your dry ingredients sifted together in a large bowl. Then, In a container, get all the wet ingredients mixed together. Add wet ingredients to the dry ingredients until well incorporated. Your batter would be ready. This recipe makes one loaf bread of 9” * 4 and 1/2” and one 7” cake. You can also make cupcakes with this batter.
Dry ingredients:
- 3 cups all purpose flour, leveled**
- 3 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon green cardamom powder
- 1/2teaspoon salt
Wet ingredients:
- 1.5 cup canned mango pulp**
- 1/2 cup milk
- 2/3 cup vegetable oil
- 1 cup granulated sugar**
Preparations:
- Preheat oven at 350 F/180 C
- In a large bowl, sift all dry ingredients. Mix well.
- In another bowl, mix all wet ingredients. Whisk well until sugar is dissolved.
- Slowly add the wet ingredients into the dry ingredients. Mix well until everything is combined into a batter.
- Grease the pans with oil or line them with parchment paper.
- Pour the batter into the loaf pan half way through and remaining batter in the round cake pan.
- Place the pans in the oven and bake them for 35-40 mins.
- My round cake was done in 25 mins. My loaf bread was done in 35 mins.
**Notes:
1. I have used canned mango pulp, so I did not add any color to the batter. If you are using fresh mangoes, scoop out the pulp and purée it in the blender. Do not add water.
2. This loaf is just perfectly sweet as a fruit bread. It is not as sweet as a cake. Sprinkle the loaf with some powdered sugar if you need it to be sweet.
3. Buttercream frosting mixed with some mango pulp goes well with this loaf if you plan to frost it.
4. You may substitute half of the flour with whole wheat flour if you wish to cut down all purpose flour.
