Chocolate Tapioca Pudding



Tapioca pudding is a creamy dessert which uses small tapioca pearls boiled in the milk and sweetened with sugar. You can call it Sago Kheer or Sabudana Kheer if you wish. The procedure is similar to the Kheer with little tweaks in the taste. Here is the simple, yet delicious version of this yummy pudding.


All you need:
  • 1 cup Small Tapioca pearls
  • Water to soak the tapioca pearls**
  • 2 cups Vanilla Soy milk or regular milk
  • 1/4 cup Sugar
  • 1/2 tsp cocoa powder
  • 1/2 tsp Vanilla extract
  • Heavy cream Frosting (optional)



Procedure:

  • Soak the tapioca pearls in water overnight or at least for 4-6 hours. The tapioca pearls will grow bigger in size and soften a bit. 
  • Heat a sauce pan, add milk, tapioca pearls and let them boil on a medium flame for 20 mins.
  • Stir occasionally to make sure the milk doesn’t burn at the bottom of the pan.
  • The tapioca pearls get bigger, translucent and soft after 20 mins.
  • Add sugar, vanilla and mix well until sugar dissolves.
  • Sift cocoa powder into the mixture directly and then mix well until the mixture changes the color.
  • Let the mixture cool completely.
  • Use a piping bag to decorate it with frosting.



**NOTES:
Soak Tapioca in 3/4 cup of water.or soak them in water just enough to immerse them.
