Chia seed pudding in 2 ways







Chia pudding has been my latest to go recipe for breakfast and desserts. It’s very easy to make and it is super healthy and delicious. Chia seeds are very similar to Sabja seeds, but they have differences too. Chia seeds do not have any flavor of their own, but Sabja seeds have a mild basil flavor. Chia seeds can be consumed both raw and soaked, depending on how you want to use them, whereas Sabja seeds have to be soaked in water before consuming.

    

Preparation:

Just add milk to the chia seeds. Keep it for 3 hours, chia seeds will puff up and will be transformed into creamy, smooth pudding. We like to top it with fresh fruit and sweeten it with honey or maple syrup, but feel free to go crazy with your favorite toppings!  So, here are 2 ways to eat this superfood.

1. Strawberry Chia pudding

Makes:4 servings 


Things you need:

  • 1/4 cup Chia seeds
  • 2 cups of  Vanilla Soy milk( you can use any milk of your choice)
  • 10-12 strawberries washed and roughly chopped. 
  • 4 strawberries chopped (for garnishing)
  • Maple syrup as sweetener. (You may use sugar)

How to make:

  1. Soak chia seeds in 2 cup of soy milk in a bowl for 3 hours. This helps chia seeds to expand. This is the basic chia pudding.


2. Wash and cut strawberries and purée them using a blender or a mixer. Do not add water.
3. Heat up a pan and add strawberry purée to it and boil it until the mixture becomes thick. You may add sugar if you wish to. Set it aside and let it cool completely.


Assembling:

  • In a clear glass cup, add Chia seed pudding.
  • Stir in strawberry purĂ©e. Now the pudding will turn light pink.
  • Add maple syrup to lightly sweeten the pudding.
  • Top it with chopped strawberry and nuts of your choice. 


2. Mango Chia Pudding

Makes: 4 servings

Things you will need:
  • Mango chopped (preferably sweet)
  • Mango pulp (Fresh pulp of 1 mango purĂ©ed OR store bought pulp) **
  • 1/4 cup Chia seeds
  • 2 cups light coconut milk
  • 1/2 tsp cardamom powder
  • Sugar (optional)
How to make:

Chia pudding procedure remains the same as before. 

  1. Soak chia seeds in coconut milk for 3 hours. Chia seeds will expand and become translucent.

     2.  Use a hand blender to make mango pulp. Add cardamom powder and sugar and mix well.


     3. In a clear dessert cups, add chia pudding.
     4. Add a layer of mango pulp on the chia pudding.
     5. Top it with chopped mango pieces and nuts of your choice.



** Notes:

  1. If you are able to find fresh sweet mangoes, nothing like it. You can control the amount of sweetness that goes into the pulp. If you have to buy a store bought pulp, you may skip sugar altogether as it contains added sugar.
  2. Use light coconut milk as it has slight coconut flavor that goes well with this pudding. Do not use coconut cream.
