Black Rice Pudding
Black rice, also known as Forbidden rice or Purple rice, is considered as one of the superfoods. Earlier, in China, black rice was forbidden for common consumption due to its nutritious properties. But today it’s available in almost all counties. This wholesome grain is becoming popular Because of its nutty flavor and it has equal amount of fiber as brown rice. Different kind of recipes like black rice cakes, idli, dosa, breads, noodles, pudding, porridge etc can made with It. This kind of rice is very popular in South East Asian Countries.
How to cook Black rice:
For the pudding, ratio of black rice to water is 1:2. If you take one cup of black rice, you need two cups of water. If you are making Black rice salad or sushi, you will need a bit less water. Then the ratio will be 1: 1 3/4.
Ingredients:
- 1 cup Black Rice
- 2 cups Water
- 1/3 cup cane sugar (adjust according to your taste)
- 1/4 cup milk ( or coconut milk)
- Vanilla extract or Cardamom powder for flavor.
- Nuts (optional)
Procedure:
- Wash the rice and soak it for 4 hours in 2 cups of water.
- After 4 hours, pressure cook rice for 15 minutes in the same water. I used my instant pot for this method.
- Once the IP releases pressure, transfer the cooked black rice to a sauce pan and heat it on the stove on low flame.
- Add Sugar and milk and stir it. Let it simmer for five minutes.
- Then turn off the flame.
Serving Suggestions:
1. Black rice Pudding can be served warm during meal.
2. It can be served cold with Custard pudding. I have tried this method and works the best for our family.
3. It can be served as a dessert topped with ice-cream and sliced fruits like mangoes, peaches and bananas.
