Stove top No yeast Pizza- Quick and easy way

       This is a quick method which I have been using to make these super-fast mini personal pizzas for snacks, for lunches and for dinners too. I have made pizza using the active dry yeast and instant yeast, but this one has been my all time favorite to-go pizza as it doesn’t require oven or any kind of yeast.

Method:

A flatbread like naan is used for the crust of the pizza and it is cooked on a medium to high flame on the griddle on both sides. Once the brown spots start appearing on the crust, take it out and it is ready to be converted into a pizza. I prefer sautéing my veggies in a separate pan and the add them on my pizza as my toppings. 



  • How to make the crust: 

I used my Naan recipe to make the crust. Trust me this is a multipurpose dough which can be very handy at times. I make a big batch of the dough and freeze it in portions in a ziplock bag. 

You will need:
2 cups All purpose flour
1 tsp Sugar
Salt to taste
1/2 cup yogurt
2 tbsp oil
1/2 tsp Baking powder
1/4 tsp Baking soda
Luke warm water

Add all the ingredients in a mixing bowl. Knead it into dough using luke warm water. The dough should be just like the Roti/Chapathi dough. Keep the Dough covered for 20 mins.

Take a portion of dough and roll it into a 1/4 inch thick crust and cook on both side on the stove using a little bit of oil. Similarly cook all the crusts and keep them ready. You can make 4 to 5 mini pizzas with this amount of dough.
  • How to makes Pizza:
Pizza crust
Pizza sauce
Veggies of your choice (onion, green pepper, brocolli)
Shredded Mozzarella cheese
Pizza seasoning of your choice

There is no perfect measurement to make pizza, once you have the crust ready. You can increase and decrease the quantity of sauce or cheese if you want.

Once the base is cooled, place it on the heated cast iron griddle. Spread pizza sauce on the Naan. Spread the cooked veggies on top. Spread grated cheese and cover the pizza with a glass lid. Cook the pizza on low to medium flame until the cheese is melted. The base of the crust will be crispy.

Remove the pizza on a cooling rack. Add seasoning on top and enjoy.


The leftover pizza can be reheated for few mins on a skillet with the lid on. But it’s better to have it fresh.
