Paneer Bhurji


Bhurji means scrambled, so this dish is basically scrambled paneer or cottage cheese. Paneer Bhurji is made with cottage cheese and veggies like onions, tomatoes, green peppers and flavored with garlic and other spices. It can be served as a side dish with Indian flatbreads like Roti, Paratha, Naan or Kulcha. It can be served as a breakfast dish along with the bread. It can be used as a filling for sandwiches or stuffed breads.


Basic Ingredients:
  • 2 cups crumbled paneer
  • 1/2 chopped onions
  • 1/2 chopped green pepper
  • 1 tomato chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup green peas (optional)
  • 1 tsp Garlic paste 
Spices:
  • 1 Bay leaf
  • 1 inch cinnamon stick
  • 1 cardamom
  • 1 tsp cumin seeds/ jeera
  • 1 tsp red chili powder
  • 1 tsp Pav bhaji Masala 
  • 1 tsp dried fenugreek leaves/ kasoori methi 



Method:
  • Heat oil in the pan, add cumin seeds, bay leaf, cinnamon, cardamom and sauté until they are aromatic. 
  • Sauté onions and garlic well until onions are cooked.
  • Add green pepper and sauté until it’s it completely cooked.
  • Add tomatoes and green peas and sauté for two mins.
  • Add red chili powder, pav bhakti masala and cooked for two mins until the masala is aromatic.
  • Add crumbled paneer and mix until well incorporated. Cook for two mins.
  • Garnish the bhurji with cilantro and kasoori methi.
  • Serve Paneer Bhurji with Rotis.


Notes:
  • You can use home made paneer for this recipe. Store bought paneer can be hard to crumble. You can use a grater to grate the paneer.
