Nankhatai
Nankhatais are Indian shortbread or cookies flavored with cardamom and topped with nuts, They are very light, flaky, crisp and easily melt in your mouth. The aroma of the ghee and cardamom powder in the Nankhatais make them so rich and irresistible. Enjoy them as the evening snack or have them with your cup of evening tea.
Ingredients :
- 1 cup - All purpose Flour
- ½ cup – Gram Flour/ Besan
- 2 ½ tbsp. – Suji / Semolina
- ½ cup - Powdered sugar
- 1 pinch of Salt
- 1 tsp of Cardamom Powder
- ½ cup – Ghee /Melted Butter
- Almonds for garnishing optional
Instructions:
- In a bowl, add in the All purpose flour, besan, suji, powdered sugar, salt & cardamom powder and mix well.
- Pour in the ghee and form into a dough. Divide into 20 equal portions. Shape into round ball and press it a little; place them in a baking tray, top with nuts of your choice.
- Bake in a preheated oven for 15 mins at 150 Degree C /300 degree F for 18 mins.
Tips:
- Check after 18 minutes take the Nankhatais out of the own. Don’t freak out if they are still soft. Once they cool down they tend to harden a bit.
- If the base of the Nankhatai is light brown it means they are done.
- Store the Nankhatais in an air tight containers.
