Black Bean Cilantro Hummus
This Hummus is made with a few main ingredients like black beans, cilantro, green chili, garlic and olive oil. This can be made ahead of time and you might want to consider doubling the quantity as it can be used to snack on chips or veggies, or can be used as a sandwich spread or a spread for tacos.
Though the end color of this Hummus is not appealing, I was really satisfied by the taste and texture.
Ingredients:
1 can black beans, drained and washed
1/2 cup chopped cilantro
2-3 cloves of garlic
1 green chili
Salt to taste
1/4 cup olive oil
1 tbsp lime juice
Method:
Throw in all the ingredients in the blender or a food processor and blend it in a smooth paste. Do not add water into it. You might have to run a spoon or a fork a few times to get the ingredients moving. This Hummus goes well with Naan tacos too.
