No Fry Crispy Taquitos | No Oven Indian style Taquitos | Whole Wheat Crispy Taquitos
This is a Taquitos recipe with a twist of Indian spices. The dough which I used is just the regular whole wheat flour dough used for making Rotis. You can use all purpose flour to make the dough. If you have tortillas, they work great too. I have used the spices which are easily available in the pantry. You can add or skip any spices from the list. This is an easy recipe which everyone loves and can be served in parties as finger food appetizers. Serve the Taquitos with cilantro chutney, Red Pepper Sauce or tomato ketchup.
Ingredients For filling:
5 boiled potatoes, peeled
1/2 cup chopped onion
1/2 cup corn kernels
1 tsp garlic powder
1 tsp grated ginger
2 tsp garam masala
1 red chili powder or 2 green chilis
1 tsp Amchur powder
Salt to taste
1/4 cup Chopped Cilantro
1 cup grated Mozzarella cheese
Chopped Lettuce leaves, washed
Avocado slices
Make Filling:
Allow the boiled potatoes cool completely. Heat oil in pan, add ginger and sauté until aromatic.
Add mashed potatoes.
Add all the spices- Red chili powder, garam masala, amchur powder, garlic powder and salt and mix well. Add cilantro, corn and chopped onions. Mix the filling until it is homogeneous. Now the mixture is ready, keep it aside to cool.
Make the Taquitos:
Prepare small rotis with the dough.
Spread mozzarella cheese on the roti, place few lettuce leaves, avocado slices and a portion of potato mixture. Roll the Taquitos as tightly as possible. Temporarily secure with a toothpick. Similarly make ask the Taquitos and keep them ready.
Heat 2 tbsp oil on the non stick skillet, place the Taquitos on them and allow them to become crispy and brown in color. Keep turning them to shallow fry on all sides. Remove the toothpick once the Taquitos hold their shape.
Serve these yummy snacks with sides of cilantro chutney and sweet red pepper sauce.
