Schezwan Rice | Leftover Rice

Schezwan Fried Rice is one of the quick Indo-Chinese Cuisine. It is served as a main course in Indo Chinese meal. A Chinese Meal without Schezwan Fried Rice is just incomplete. The main flavor is derived from the schezwan sauce which is made with garlic, red chilies, ginger, vinegar and sesame oil. This is one of best choices to make when you have plenty of leftover rice on hand. Leftover rice is dry and not mushy which makes it perfect for this recipe. If you do not have leftover rice, cook rice as usual and spread it on a wide dish and allow it to dry completely before marking it.

 

Ingredients:

1 cup Basmati rice (Leftover)
1 cup veggies cut into long and thin pieces (carrots, onions, green pepper, orange pepper, green cabbage)
1/4 corn kernels
1 tsp ginger and garlic paste
1 tbsp soy sauce (optional)
1 tbsp tomato sauce
1 tbsp schezwan sauce
1 tsp vinegar
salt to taste
1 tbsp sesame oil
1/4 cup chopped spring onions for garnishing



Method:

1. Wash and soak basmati rice for 15 mins. Cook rice in rice cooker or pressure cooker and spread it in a plate to cool down.
2. Heat sesame oil in the tawa and add all the veggies one by one and saute them till they are cooked but crunchy.
3. Add ginger garlic paste and saute for few seconds. Then add schezwan sauce, tomato sauce, soy sauce , vinegar and let it cook for a minute.
4. Add cooked basmati rice in the tawa and mix it well. Add salt after the rice gets a even color.
5. Garnish Schezwan rice with chopped spring onions.
