Tabbouleh Salad | Tabouli
- Classic Tabouli or Tabbouleh is a simple Mediterranean salad of very finely chopped vegetables, lots of fresh parsley and bulgur wheat, all tossed with lime juice and olive oil. This recipe uses a ton of parsley as it is the main ingredient. Feel free to play around with the proportions of the veggies.Ingredients:
- 1/2 cup bulgur wheat
- 1.5 cups Hot water
- 2 Roma tomatoes, very finely chopped
- 1 Cucumber very finely chopped
- 1 bunch parsley, washed very finely chopped
- 4 green onions, white and green parts, very finely chopped
- Salt to taste
- 1/4 cup freshly chopped mint leaves
- 3–4 tbsp lime juice (or lemon juice)
- 3–4 tbsp extra virgin olive oil
- Pour hot water over bulgur in a bowl; let soak until water is absorbed and bulgur is soft, about 30 minutes.
- You can also boil the bulgur wheat in water for 15 mins occasionally stirring in between. Letting in dry on a wide plate, help the grain to get separated from each other.
- Wash and cut the veggies.
- Place the chopped vegetables, parsley, mint leaves and green onions in a mixing bowl or dish. Add the bulgur and season with salt. Mix gently.
- Now add the the lime juice and olive oil and mix again.
- For best results, cover the tabouli and refrigerate for 30 minutes. Transfer to a serving platter. If you like, serve the tabouli with a side of pita bread and Hummus.
